A lovely wintery dish. Very easy to prepare, but needs a bit of time in the oven, so planning ahead is required. Inspired by Jamie Oliver’s Chicken with sweet tomatoes recipe.
Ingredients for four people
4 chicken legs
2 red onions, chopped
2 cloves of garlic
Two handfuls of cherry tomatoes, if available different shapes and colours
A tin of chopped tomatoes
Pepper and Salt for seasoning
Preheat oven to 180 degrees. Season your chicken legs and brown in a large pan, before putting into an ovenproof dish. Fry the onions and garlic in the same pan, add the cherry tomatoes, tinned tomatoes and fresh basil. Let simmer for few minutes, before pouring the sauce into the ovenproof dish with the chicken legs. Put in the preheated oven for about an hour and a half. Serve with fluffy potatoes and fresh spinach. For a Moroccan inspired twist, serve with couscous and add a few dried apricots to the dish ten minutes before taking out of the oven. Use cumin instead of basil for seasoning.
